½ cup split yellow mung dal (or red lentils as an alternative)
6 cups water (or more for a soupier consistency)
1 tbsp ghee (clarified butter) or coconut oil (for a vegan option)
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp turmeric powder
1 tsp coriander powder
1 tsp fennel seeds
1 tbsp grated fresh ginger
A pinch of hing (asafoetida) (optional)
Fresh cilantro (optional) for garnish
Sea salt to taste
Lime or lemon wedges (optional)
Directions:
Rinse the rice and mung dal thoroughly until the water runs clear.
In a large pot, heat ghee or coconut oil over medium heat. Add cumin seeds, mustard seeds, fennel seeds, and hing. Sauté until the seeds start to pop and release their aroma.
Add fresh ginger and sauté for another minute.
Stir in turmeric, coriander powder, and mung dal, and sauté for a few minutes.
